Princess Professional sous vide has a handle at the top with clamp to keep it in place. The sous vide circulator is IPX7 certified which means it is completely waterproof. The lower part consists of a stainless casing with a plastic bottom where there is a small propeller to circulate the water.
Place it in a vessel filled with water from about five liters and up and fasten the clamp. The sous vide machine must only be used with water. The filled water volume must be between the MAX and MIN level marks on the stainless steel casing. The food is vacuum packed and submerged in the water. Never cook food that is not packaged.
When you connect the plug in the electrical outlet, the display of the sous vide machine lights up, then click on the touch display to enter the temperature setting and then set the length of time the food should be cooked .
You can choose a temperature up to 95° C.
When the right temperature is reached, a beep is heard and then the timer starts count down. Cooking with sous vide takes longer but gives a better and more even cooking result.

Sous vide is pronounced [su vid] and comes from the French and means "in a vacuum". The method involves cooking the food in an airtight plastic bag which is then placed in a water bath with a low, carefully controlled temperature for a long time.
The result is that the temperature is the same right through the entire ingredient, that is to say that you can cook the inside at the desired temperature without overcooking the outside. This in turn leads to the raw material retaining nutrients and taste in a completely superior way. Meat becomes more tender and juicier and vegetables get a more concentrated taste.
